About Solms-Delta Wine Estate
Professor Mark Solms is currently overseeing the rebirth of this Franschhoek farm which has produced wine for four centuries. Renowned for discovering the brain mechanisms of dreaming and background in modern neuroscience, he chooses grape varieties and manages the vineyards using a scientific approach.
Once analysing the soil and Mediterranean climate, he chose Rhone varietals and planted mostly Shiraz, Mourvèdre, Grenache and Viognier. He also adopted an ancient wine-making culture (desiccation) once used in Greece and Rome that involved twisting the stalks of bunches of the vine pre-harvest to half-dry the grapes and concentrates the flavours. Desiccation became Solms Delta’s signature and in 2005 the estates first three wines were launched under the Wijn de Caab label and two of these used desiccated grapes.
Join a farm tour led by farm residents which highlights more than great wine. You will learn about the cultural and musical heritage of Solms-Delta, insight into the lives of the farm workers and the vineyards they tend to. Other tours include food and wine pairings, Archaeology exploration, Natural heritage tours and fun farm walks. Order a pre-packed picnic courtesy of Chef Shaun Schoeman from Fyndraai Restaurant and relax beside the Dwars River.
