Exquisite Cuisine At Protea Hotel, Fire and Ice

Be transported to old Hollywood when you step into the Protea Hotel Fire & Ice restaurant. Fire & Ice offers a unique fusion of dishes that harken back to another time (when nobody counted calories!). Inspiration has clearly been found from all around the world, and the dishes on the menu are just as decadent as the chandelier and silver bedecked dining room.

Tease your tastebuds with the delectable appetizers, which include such delights as Champagne’s Bride (oysters served with lime ganita), Mushroom Cloud (roasted Portobello mushrooms soaked in balsamic rosemary jam, filled with a creamy blue cheese reduction), Duck and Dive (Shanghai mixed-spice duck breast Carpaccio) or the Sweet Lip Salad (beetroot and citrus flavoured salmon Gravadlax, served with a berry and watercress salad). Patrons are dared to show restraint when it comes to Fire & Ice burgers, and with burgers topped with Swiss cheese and Moroccan-spiced Lamb Burgers, we understand why.

Meat is an affair of the senses, and no ingredient is spared in the creation of something truly exceptional. Lamb Shank is given the Fire & Ice treatment, with caramelised shallots and smoky wine sauce; lamb is French trimmed; Springbok is served in a ragout, and tossed with a spinach Verdi gnocci. Ostrich is dressed up in a soy marinade and served on braised fennel and sweet potato mash, while Norweigan Salmon is served on wasabi mash, and simply melts in your mouth.

Desserts are humorously titled, ‘Dentist’s Nightmare’, and we’re left speechless at the decadence of it all. Sample a delicious walnut praline with crunchy banana, served with caramel sauce; Cherry Popping is a cherry clafouti tart apparently served with desire, passion and betrayal and Organ Failure is a an organic chocolate filled warm fondant.

All in all, we love the sense of humour at Fire & Ice and the unapologetic celebration of sheer indulgence and hedonism.
