About Lynx Wine Farm

When owners, Dieter and Diana Sellmeyer, were wondering what to call their new label, their workers ran to them saying they had finally seen the shy, nocturnal Lynx who visited the farm and not just its tracks. Thus the Lynx label was born. They purchased this table grape farm which lies along the Wemmershoek River in 1997 and replanted the farm to produce Lynx wines.

Their maiden vintage was the 2003 vintage, with 500 cases produced and Lynx is the smallest wine estate in the valley and produces less than 2500 cases every year. They aim to remain small, but continually produce premium, memorable wines.

At the end of January, harvest begins with the Merlot and continues into April when cabernet Sauvignon is harvested. Grapes are harvested in the early morning hours and all reach the cellar by eleven. Traditional open concrete fermenters used which bring out the primary flavours. Seven days of cold soaking, 7 days of fermentation and 7-10 days of maceration await our red wines. The Lynx Shiraz 2010, flagship wine with awards including Top 10 in Shiraz Challenge and Silver at the Old Mutual Trophy Wine Show whilst only 900 bottles of the Lynx 2009 was produced and nominated for a Platter 5-star.
